Ingredients for Karthigai Vella Adai

This recipe makes around 6–8 medium adais.

Dry Ingredients:

Raw rice – 1 cup (or rice flour – 1 cup) Grated coconut – ¼ cup

Cardamom powder – ½ tsp

Black pepper (optional) – ¼ tsp (crushed)

Ghee – 2 tsp (for flavoring)

For Jaggery Syrup:

Jaggery – ¾ cup

Water – ½ cup

To Cook: Ghee or oil – as needed for cooking the adais

Step-by-Step Recipe

Step 1: Prepare the Rice Flour (Skip if using store-bought)

Wash and soak 1 cup of raw rice for 2 hours. Drain and grind to a smooth, slightly coarse paste with minimal water. Spread it on a cloth and let it dry slightly. Sieve the flour and roast it on low flame for 2–3 minutes. Keep aside.
