How to Make Delicious Gobi ke Kofte at Home?


If you're a fan of rich North Indian flavors and want to try something different from the usual paneer or aloo kofta, then Gobi ke Kofte (Cauliflower Kofta) is a must-try dish.

It’s a savory blend of grated cauliflower and spices, shaped into dumplings and simmered in a creamy, flavorful gravy. In this post, we’ll walk you through a step-by-step recipe to make Gobi ke Kofte at home—easy, wholesome, and perfect for a family dinner or festive occasion.

What is Gobi ke Kofte?

Gobi ke Kofte are soft, spiced cauliflower dumplings that are either shallow-fried or deep-fried and then served in a rich tomato-onion-based gravy. It's a vegetarian twist on the classic kofta curry and is both nutritious and satisfying.

Ingredients You’ll Need

For the Koftas:

  • 2 cups grated gobi (cauliflower)

  • 2 boiled potatoes (mashed)

  • 2 tablespoons besan (gram flour)

  • 1 green chili (finely chopped)

  • 1 teaspoon ginger (grated)

  • Salt to taste

  • ½ teaspoon red chili powder

  • ½ teaspoon garam masala

  • Oil for frying

For the Gravy:

  • 2 tablespoons oil

  • 1 teaspoon cumin seeds

  • 1 onion (finely chopped)

  • 2 tomatoes (pureed)

  • 1 teaspoon ginger-garlic paste

  • ½ teaspoon turmeric

  • 1 teaspoon coriander powder

  • ½ teaspoon red chili powder

  • ½ teaspoon garam masala

  • Salt to taste

  • ¼ cup fresh cream or cashew paste

  • Fresh coriander leaves for garnish

How to Make Gobi ke Kofte at Home

Step 1: Prepare the Kofta Balls

  1. Squeeze the grated cauliflower to remove excess water.

  2. In a mixing bowl, combine grated gobi, mashed potatoes, besan, spices, and herbs.

  3. Mix well and shape into small balls.

  4. Fry the koftas: You can deep-fry or air-fry them until golden brown. Keep them aside.

Step 2: Make the Gravy

  1. Heat oil in a pan and add cumin seeds.

  2. Add chopped onions and sauté until golden brown.

  3. Add ginger-garlic paste and cook for a minute.

  4. Add tomato puree and cook until oil starts separating.

  5. Add turmeric, chili powder, coriander powder, salt, and garam masala.

  6. Cook the masala well, then add cream or cashew paste for richness.

  7. Add a little water to adjust the consistency and simmer for 3–5 minutes.

Step 3: Combine and Serve

  1. Gently place the fried koftas into the gravy just before serving.

  2. Garnish with fresh coriander and a drizzle of cream (optional).
